A Yummy Find

So, last week I was stalking Meg Farrell's website and I found this really interesting post:


Meg's Buffalo Chicken Ranch Quesadillas.

What's this? Chicken? Ranch? Buffalo sauce? Hmm... this sounds really good!


So good, in fact I just had to try it and you know what? It really was pure yumminess!

Meg’s Buffalo Chicken Ranch Quesadillas

Ingredients:
  • Bottle of hot sauce (we use Franks)
  • Stick of salted butter
  • Boneless skinless chicken (breast or tenderloin preferred) *Plan 3-4 oz per quesadilla
  • Burrito sized flour tortillas
  • Ranch dressing
  • Sharp cheddar cheese, shredded
  • Salt
  • Pepper
  • Garlic powder
Make the buffalo sauce:
  • Melt 1-2 tablespoons of butter in the microwave
  • Add hot sauce to taste. Mine was most of a small bottle of hot sauce.
  • Stir frequently.

Make the chicken:
  • Cut chicken into bite size pieces and place in bowl
  • Add salt, pepper, and garlic powder to taste
  • Melt a large pat of butter in a non-stick skillet over medium heat
  • Once pan is hot, add chicken. Stir frequently.
  • When chicken is about half way done, add a 1-2 tablespoons of buffalo sauce into skillet.
  • Turn down to low heat and allow to simmer until fully cooked.

Assemble the quesadilla:

1.       Place 1 burrito size tortilla in a large non-stick skillet over low-med heat *a 5 on my stove was perfect.
2.       On half the tortilla, spread some sharp cheddar, half of what you intend to put in the quesadilla. *I leave a small border to allow for melting and seepage.
3.       Place about 3-4 oz of chicken (however much you want really) on top of the cheese. *Use a slotted spoon to dribble off any melted down buffalo sauce.
4.       Drizzle ranch dressing over the chicken. *I re-used a Cajun injector syringe to drizzle instead of pouring in the ranch. Just a little to taste is what we like.
5.       Drizzle a little of the buffalo sauce over the ranch.
6.       Place a bit more sharp cheddar over all.
7.       Fold the tortilla over the goodies.
8.       Give it a few minutes to brown on this side, and then flip.
9.       Give it a few minutes to brown on the other side.
10. Cut and serve.
11. Place on a plate and allow to cool a bit.
